The founder of this tradition was Jan Pavlíček senior. He became interested in the specialty of cooked, smoked sausages while working as shop assistant and later the shop leader. In his free time, he used to produce sausages for himself and his friends. He knew this was the sphere he would like to dedicate himself to. That was why, he got his studies completed, and he motivated his children to work in this specialization. In 1992 he founded his own firm in the place of the former shop selling meat and sausages. He started to dedicate himself to producing charcuterie. In 1994 he got the opportunity to buy a building on the square which he had totally demolished. He constructed a modern production hall according to at that times valid EU standards, which included the meat and charcuterie shop. This was a hard period for him, as well as his whole family helping him in the firm. Thanks to the great responsibility of the owner who never knew the words „That´s not working“, the bank credit for the whole project got paid successfully. With the time and arrival of new clients, by enlarging the production of smoked/processed meat products, with the new EU standards, the production rooms were no longer large enough. It wasn’t possible to enlarge the current shop so the owner´s son started a search for rooms where he could build a larger and more up-to-date production hall. He found space they needed, and after several discussions with no success, he finally bought a lot suitable for building the production halls. After the project was accepted, he asked for credit at the bank, and in August 2010 construction started. In October 2011 the production in the new halls began. The production is fully air-conditioned. Our aim is maintaaining high quality production by using local raw materials.
We have been producing some sixty products, always trying to accommodate the demands and wishes of our customers. Among other specialities of our firm, are products with added horse meat, smoked/processed meat products.
Jan Pavlíček senior wished to build up a Butcher´s Museum, including the machines and everything that belongs to the profession of butcher. We have fulfilled this wish of his in memoriam.
Since January 2012, the museum is open to the interested, by request, any working day.
